Designing monitoring system to check if process are being followed properly or not.

I am working in process implementation of a mobile app-based customer servicing firm.There are several processes such as managing refund, answering generic customer queries, processing cashback, etc. I have designed and documented procedures for handling each of them.

Now I am working on the setup of a montering process to check if the procedures are being followed or not.How should a checklist/ monitoring process be designed for that?
