I have found it useful to find out if the employer knows what PMI is, and how they view PM as a career path. If the employer hasn't heard of PMI, chances are they view PMs as grunts, devoid of skills other than being anal and willing to work long hours. Saving Changes...

Your prospective employer will definately approve of you giving them a good grilling as to their processes and procedures, the available templates, methodologies and how they react when a project is in crisis.
Ask them:-
"Will you stand by me?"
"What is your vision of success for a Project?"
"Do you have the necessary resources on hand to get this done?"
Make sure you know the answers to your own questions.
etc. etc. etc.
If the Project is specific, do some homework and see what you are getting yourself into. If the are in a hurry to employ you and are willing to pay above and beyond, beware!!!
