I would like to know different opinions about how to handle the following:

context: after the baseline has been defined and during the execution, sometimes the PM founds that there are some important tasks not included on the plan

question: if the PM can not define a new baseline, but new tasks are included , how you should be handle the S curve?

Missed requirements and other "errors of omission" could be treated as a variance.

Depending on the organization's internal policies, the variance might persist till the end OR there might be a requirement to have a PCR approved and the project re-baselined.

Your Change Management Plan should specify what to do.

If you follow the change management plan procedures, you should not have a problem and they will be variance

Like others mentioned it should be covered in change management, but many places change management is not defined properly and also they don’t allow to re-baseline as well…..have to deal with this by looking into culture, process and people dynamics

but, please consider that my concern is about how you should be handle the S-curve?
the customer doesn't want a new baseline.

after you already draw the s-curve, and you want to include the new tasks there is a discussion about what is the right procedure to be used?. for example, if the new tasks have to be included with "cero" weight on the s-curve

Fully agree with Eric and Kevin. Just some personal reflection: in the actual world, controling a project using baseline has no sense.
