The success of the project depends on the achievement of objectives/Goals. So one has to keep the end result as a top priority. The PM can follow the plan to the core but if it is not achieving the result then what's the point?.
It is here that the PM will have to rely on Experience, Expert Judgment, Project analytics and make necessary adjustments and ensure that Project is on track.
I agree with Rajesh that the biggest hurdle will come in motivating and ensuring that stakeholders understand why there is an adjustment/change/deviation from the existing plan and are we making the right move. Saving Changes...
Depends on the level of detail in the plan. Wisdom and judgment of a PM is in knowing how detailed the plan should be based on the context of the project at the current time as well as knowing when to throw the (current) plan out of the window and start over because too much has changed.
It depends. Scope management is one of the key responsibilities of the project manager. If there is a need to change the plan, then it should be managed. Otherwise, following the plan is a must. Saving Changes...

A famous WWI general said: no plan survives first enemy contact. Fire departments have many detailed plans for a variety of situations and exercise on them.
The main benefit of a plan is that you project (!) your thoughts into the future, maybe envision different possible futures. And then you are more secure, confident and prepared.
