This is more of an MS Excel question than project management, however, I can tell you there are amazing videos on YouTube for creating dynamic dashboards in Excel.
At a highlevel, one simply needs to collect and enter data, then chart it out. Once large datasource can supply several charts.
Just type MS Excel dashboards into a search engine or YouTube and have fun!
