Changing the Project Plan

I'm new to PM, so this is a very basic question.

Let's say that the planned schedule has a target date to complete the project by 12/31.

A designer comes to you as the PM and says "I have other things I need to do and for that reason, I am going to do my best to get this done and cut over to production by 10/1."

Do you continue to manage to the 12/31 date OR do you change the project plan dates?
