Is demo sufficient for validating scope in IT service management (service-now) project or inspection and walk-through required?

What you stated is what make a IT project totally different from project that is creating other type of products just in case a software component is into it. Software is "intangible". A demo is not enough. I can write a lot but go to the standards that are there from 1956. So, it is not a new item to talk about.

As I responded in the LinkedIn group:

It all depends on the level of complexity and criticality of the solution. A solution which is not mission-critical or where safety might not be a consideration might be accepted through basic user acceptance testing whereas one where the potential impact of defects is much greater will require greater verification.
