During PM interview in IT industry you are asked the following question:

Give an example of how you managed risk in one of your projects?

How would you respond?

Not sure what is your expectation here with this question.
But It is simple, you can give any example of your project risk, the impact analysis and how you mitigated the same or what you planned as your contingency.

I think you might not get the answer as you mentioned, as this is a detailed question and it may not help in a specific way. But mostly the approach can be suggested as I mentioned above.

you should talk about how you determined the appropriate approach to managing risks given the context of your project, the risk appetite of the performing and funding organizations and so on.
