Brian almost everything we do in life is a project and while you won't be listing this mornings breakfast as a project on your CV what you need to do is list the project you have led, or been part of in your org. Just summarize the most important ones with a brief description, your role and outcome. Sometimes it is good to list the value and team size if you were in a management role. Highlight some of the operational project which you have handled with scope, team size, tools used and period of projects as self initiated projects as the role demanded.
