Mediating factors are ones which are directly related to risk appetite whereas moderating factors would be independent ones which can affect it.

If we are looking at individual stakeholder risk appetite, then a mediating factor might be the relative level of experience the stakeholder has with the work being considered. The greater the experience, the more likely their risk appetite will be higher.

One moderating factor would be the constraints on the project. These are independent variables, but the tighter they are, the greater their influence on the stakeholder's risk appetite.
