The project go live dates have changed and I have been asked to rebaseline a project.

How do I go about doing this in MS Project?

In MS Project: Tools -> Tracking -> Clear Baseline, then Tools -> Tracking -> Set baseline.

Hope I'm not too late in reminding you to keep an archived copy of the project plan file before you re-baseline.
Easiest way is to copy and rename the file before you make this change.
