I am looking to start using new software for project management and creating Gantt charts.

What do people think of MS Project & Monday.com? Saving Changes...

To be honest, I used several tools and in the essence all are similar because gantt is based on a math algorithm. I used from more "sophisticated" like Primavera to more simple like some free of use, including it some free templates that work very well with MS Excell. Saving Changes...
My preference is MS Project, and not just because I've been using it for almost 20 years. I've used or tested several different tools and have found that the web based tools, like Monday.com, Wrike, ClickUp, etc, are similar but different enough that it can be difficult to find a consensus on which is better. Recently, I've been taking a look at ProjectLibre. It's a lot like MS Project, but one of the things I like most about MS Project (desktop client) that I haven't seen on other tools (and it could just be an experience thing) is the Organizer - being able to create custom fields, views, etc. and share them between project files.
Another reason I lean toward MS Project is that resource names don't have to be tied to actual people. This may seem counterintuitive, but it fits within the context of the organizations I've worked in. Employees at the companies I've worked for haven't been expected to update tasks in the project schedule and the companies haven't wanted to pay for licenses for MS Project for anyone but project managers.
I also like the ability to plan sprints in MS Project. One of it's shortcomings, however, is reporting. Some of the canned reports are helpful for me, but I end up creating reports, using other tools, for my stakeholders.
Looking at web based tools, I prefer ClickUp over Wrike (especially for reporting). Monday.com seems similar to ClickUp, but I haven't done a real comparison or used Monday.com as much. SmartSheets seems powerful, but there also seems to be a little more administrative overhead. Saving Changes...

I'm assuming that you are looking for more than bar chart generation which can be achieved using spreadsheet programs like excel (or even pen and paper). If your looking for a vehicle to plan and track time and cost progress I have worked mostly with Microsoft Project with minor exposure to Primavera. You have to determine what is your end objective and validate that your chosen program will get you there.
Note that not all project management requirements are met by either program - mostly planning and tracking. You still have to address risk, communication, quality, integration, governance, and other management elements. Don't know of a program that will assist you to do it all. Saving Changes...
