Documenting Projects

Hi, I would like to document projects (tech and non tech) already in place in the org, like sponsors, objectives, architecture, partners, resources, etc.
Does anyone know any template that I can use for this?

I'd suggest searching for Project Charter templates in the Templates section of this community, however, it depends on the level of detail you want and who your audience will be.

If all you want is an inventory, then a simple Excel spreadsheet with one row per project might suffice...

I doubt you could find one template that can contain all of that. A systems architecture alone is composed of multiple views such as requirements, functions, and operational view. You can find many IEEE standards to help identify the many things you might choose to document. A SEMP (Systems Engineering Management Plan) template would be a top level document that would identify all the lower level templates for both the systems definition, and the PM governance processes.
