Can anyone advise or assist me in planning/scheduling and scope of works for a planner? I started my next career milestone with planning engineering and am currently performing Project coordinating.

Start with PMI documentation and get yourself a scheduling package such as Microsoft Project and work with it starting with a simple project and progressing to more complex. This will teach you the language and strategy of planning.
