This definition is from a business perspective.
The 'value' to a customer obviously changes as a project advances starting with assistance in defining the need to actually delivering the solution to the need. There must be publications or at least papers on defined value streams but I'll let you do the research. Saving Changes...

Value stream is process related and mostly used in Operations or Supply Chain management.
The different levels of value stream are below.
1. Supplier -Information flow-Customer. 2. Process boxes 3. Process data boxes (w/metrics) 4.Time and Summary statistics. (Value stream metrics).
Purpose of a value stream : Identify waste within and between processes. Scope : Starts and ends with the customer. Description: Visual representation of the flow of material and information as a product or service. (Starts with customer request and ends with product or service delivery) Level of detail : takes a high level look at company's flow of goods from supplier to customer. Usage : Find bottle neck, highlight sources of waste, provide baseline and implantation plan with one tool Key metrics: Uptime, CO time, FTQ, inventory levels, cycle time, wait time, headcounts etc.
While coming up with process value stream maps, it is important to ask some questions and see where your processes are currently, where do you want to head and use appropriate metrices.
