Scrum Product Owner is a different role altogether. In my opinion, it may not add too much value for a PMP-certified Project Manager. CSM (Certified Scrum Master) may be better and sometimes compliments the role of PM. Saving Changes...
Usually a P.O. is a distinct role form a PM so you would need to decide which direction you wish to pursue. Also, remember that certification without sufficient experience is almost useless.
IMHO any process that is repeatable and which is connected with a large amount of historical data stored in some machine-friendly environment can be influenced by AI.
Machine learning (ML), one of the fields of AI, relies mostly on algorithms that use a large amount of known data to "learn". Then, after the validation of the learning process, an algorithm can be used for the data inputs that are not known. It is called "supervised learning" and, as for now, it's one of the most common ways towards AI.
I encourage everyone to go into some basic training around AI to understand its challenges and limitations - it will uncover a lot of myths about it. In my opinion, the PMP exam, as well as the next version of PMBOK shall contain some introduction to AI as well. Saving Changes...
