AI is a boarder term. If you are talking about generative AI my recomendations are: 1-take a closer look to PMI´s free courses. You will find lot of answers and lot of examples in there. 2-You can create a whole solution (solution is equal to "the thing" to be created plus "the way" to create it) end to end started from business analysis tasks and following with project management tasks.
