As Sergio says, go beyond GenAI as unless you organization is willing to sign up for an enterprise version of one of the mainstream GenAI tools which will provide "some" data protection, I'd doubt your data, security & privacy owners would permit usage of the public tools.
There are definitely a lot of non-GenAI use cases applicable to finance - for example, large learning models which can help to automate a lot of fraud analytics checks or models which can help with loan review processes.
