Definitely 2.
No 1 is, quite frankly, boring - it is basic admin and has been around so long that little is new or not available to the most basic search (or maybe its just that I've worked in a lot of time-orientated businesses such as law firms).
No 3 is maybe historically interesting, but not going to really help do my work - it is about something that has happened and is embedded so not any major questions about it, and there's no real reason to expect the next big thing will follow anything like the same route. Saving Changes...
Personally, if I was to choose, I would have opted for:
2. Managing an offshore software development team
That would be the most relevant to what I am currently doing or expecting to do as an experienced project manager. Even, if that is not a state of the art topic, it is still somehow a changeable area to many project managers. Saving Changes...

Managing offshore development teams- its a wide topic and one could run 2 - 3 webinars on the topic. Saving Changes...
Indeed, the topic is rather wide. For now we are planning to focus on tools used to collaborate with remote developers and control their work (project management systems, time tracking tools, etc.).
Perhaps we won't manage to cover all the aspects of this in one webinar. Then we'll consider holding further ones :) Saving Changes...
