PMI's definition is a reasonable general one as a unique, temporary endeavor delivering a product, service or result.
For practical purposes, organizations should take that general definition and make it specific and more objective for their purposes. For example, adding quantitative thresholds to ensure that not everything is treated like a project.

I agree with Kiron Bondale here. Just trying to add something, from years ago there is a movement starting from portfolio budged assignement to shift from project to solution "way of thinking". I firmly believe on that as just one of the key success factors. Saving Changes...
I would also like to add COMPLEXITY (number of countries, degree of uncertainty, etc.) as main driver for defining an "endeavor" as project. You can very well order a replacement of an existing "just plug-in" machine - no validation etc. Classifying that one as a project only because its an expensive "just plug-in" machine would not help but rather drive administrative workload.
