How've you inspired people to actually attend the virtual coffees? We've always ran into the issue where its an awkward, forced interaction unless people are already connected.
Make sure the work is divided to take advantage of timezone and geographic differences not such that it is impacted by it. If the team is composed of dispersed sub-teams, have sub-teams responsible for whole components rather than one stage of a delivery lifecycle.
