How to perform pilot testing for software application?

Hi Dears,

Am in the final process before the sign-off of my project for IVR software application. I have done the UAT in the testing environment and all test cases passed. Now am in Pilot Testing process where i have to test again all test cases in the production environment.
Please advise how to perform this process and if there is a methodology or a plan or any document that will help me please share it with me.
