I've done lots of things:
Saying thanks
Putting the team up for an internal award
Asking (and getting) the CEO to write letters of appreciation
Buying small gifts from my own money
Asking the vendors on the project to donate quality freebies like umbrellas, fancy pens etc and making everyone a goodie bag
Organising a meal out.

In our organization, I've seen the PM organize a small celebration, with refreshments. At this event, the PM may acknowledge team members, and generally thank the team.
I haven't tended to this, rather I've given team members a $5 starbucks card, accompanied by an email to their supervisor, in which I praise the team member. I highlight what they contributed to the project's success, how they were an asset on the team. I always CC the team member on this email.
I also try to ensure that team members learn something useful while they are on my projects. I include what they learned in my report to their supervisor, along with a thanks for allowing them to work on the team. Saving Changes...
