I am working in a IT telecom spanish department and my role is try to find the processes & Activity & Task in this area. For this reason I'll need advises and links and documentation to jump this big trouble.
I want to notice you that the company is new so may be we do not have to re-design legacy processes.

Try looking at the approaches described in Value Stream Assessmentand BRE. Primarily, I suggest you focus on the vision clarification and customer and stakeholder identification in VSA. The idea is to back into the processes based upon vision the organization is trying to achieve and the customers that it must satisfy.
