It's always frustrating when you see areas you can add value and are not given the opportunity. In this case, it sounds like you need to keep in mind that you have a customer you're serving and need to provide the services they are interested in paying for.

You are only as strong as your weakest link. Project management is a misunderstood job role, however formalized it is made to be, across companies, industry verticals, and in some more so than the other.
Knowing your interests and client interests will help you pace yourself. I may not offer all my services to the client / customer which I am passionate about, even though they may be closest to my heart.
If yo are unable to provide enough to chew - it's a problem. If you over feed them - that's a problem too! It's an art, and a science to figure out the right no and blend to provide to your customer. Good luck! Saving Changes...
