Can anyone recommend a methodology that is existing in which product development by a third party vendor is incorporated? Currently, in my Methodology Maps, the deliverables are all defaulting to expect everything completed internally. Is there a methodology that allows for the flexibility of the deliverable coming from an external and would then enable me to still maintain proper controls?

You should look in procurement.
With proper requirements in your contract you can get in progress report the information that is required.
Other option include getting Ressource from a third party in your team.
