Those are very good, especially the second one. I have done some recruiting of PMs, it is quite difficult - many of the standard questions are around "how did you handle a difficult situation/stakeholder/requirement/issue/risk/time pressure" etc., but although a PM may have a good answer to that, a good PM may well have acted to prevent such a situation occurring in the first place. I like to ask questions around the overall implementation of a project- it's QA and benefits realisation, as well as the processes they use and their communication approaches, and also something about their opinions of different PM methodologies, that gives useful insights into them as a PM professional.

Hey, I would like to add/share something here instead to open a new discussion.
Yesterday during a job interview, the hiring manager requested share with them some projects plans, check lists, communication plans or meeting status ppt from my last projects.
Very politely I answered that I don't have this information, as a freelance or company employee all the documentation that I generated belongs to the client or the company and I've never keep anything. When I've finished in one client/company and gave the computer with all the information.
He've pushed several times, saying that will be very difficult that they pursue me as a candidate without this requirement.
My final answer was:
- I can prepare a draft based on my knowledge
- Imagine that finally I will work with you, and I'll create the most amazing excel file with sensitive information, clients names, providers phones, dates, figures with your budgets...would you like that if some day I'll leave your company I'll share your info to another hiring manager?
Today I've just received an automatically mail, "thank you for your interview time, we'll pursue another candidates".
Did someone request you something like this? Do you recommend me prepare a draft or something for next jobs interviews?

As you pointed out you are not the owner and are not free to share past project artefacts. You cannot even share past project templates or checklist, as they would be organizational process assets, again belonging to the organization.
You could prepare templates of what they ask.Come up with the structure of what you would use and share that with them.
