To me, the big difference between risk appetite and risk tolerance is the reward. Risk appetite is about the reward, risk tolerance is not.

Risk tolerance says "how many bad things am I willing to put up with?"

Risk appetite says "how many bad things am I willing to put up with in order to get my reward?"

Typically, your risk appetite is much larger than your risk tolerance. To use Andrew's metaphor, you could be very hungry and want to eat 100 bananas (appetite). My stomach is full after 59 bananas: that's my tolerance.

As for the risk thresholds, they represent levels that are significant to you. You may have a risk threshold that says any variation of more than 5% from the baseline needs to be analyzed. You may also have a second risk threshold that says any variation of more than 10% from the baseline needs to be corrected. You can have multiple risk thresholds with different significance to you.

...
Appetite - the gap between current and maximum (the amount you can eat when hungry. Your capacity of how much food is based on how hungry you are)
Tolerance - how much can be handled before past maximum - like alcohol :)
Threshold - a determined value or amount that can be 'absorbed'. Like if you set a threshold on your bank account - any deduction past $100, send an email, otherwise its okay.

I understand these are very loose 'definitions', but it helped me by relating to more typical things.
Nice examples.

Well said Andrew, your explanation just nailed that.
