I have taken several MS Project classes through New Horizons Computer Learning Center. This included a two part introductory course which was a physical classroom delivery. The other course was a three day virtual class put on by Microsoft for New Horizons which I absolutely got a lot out of. They helped fill in a lot of the functional gaps that I had with that program.
I already did some checking for you, and you do have a New Horizons in Omaha. Here is there website address: http://www.omahanh.com/
I also got a lot out of the book, "Microsoft Project 2010 Inside Out" by Teresa Stover. It has been a great reference for some of the larger projects I have had. I don't know if they updated this book for newer versions of MS Project but I found this book on Amazon relatively cheap.

As further validation, I have taken a number of courses with them from MS Office Suite classes (Excel, Word, Power Point, etc.) to some recently offered Business Analysis courses. I also took my 35 hr PMP prep class with them which was awesome.
