The Panama Canal is often cited as an example of a well-done project.

The "greatest" project would depend a lot on the criteria you're using.

Thats a very open question
I believe that every field has his own great project, chemistry, TI, architecture, fisics...
greathes projects could be at presents days or ancients days
actual comunications, airplanes, spacial trips, old cities, piramids in egypt or in other world places

Probably a project that dealt with Theatre Regulation while I was at DoD. That project involved changes in the ways that patients are transferred out of hostile zones to the US for treatment. For years, everyone when through one port-of-entry, Scott AFB and were assigned to hospitals regardless of where their families lived. That made for significant difficulties for families able to see their service members.

We changed that to what is really a commercial reservation system, getting the service member on a plane to a location as near their families as possible--treating them as patients and not simply injuries or diseases for treatment. Amazing difference in everything from recovery times to happy families.

Not all projects have to be massive, but they should have lasting impact.
