Are you speaking to understanding the various ways in which excel can be used in your project management practices and documentation, i.e., planning and metrics?

I do no understand your question. Is about Excel as a tool to apply to perform project managerment? Is this is the case the answer is yes if the organization you are working today use it as a tool.

Not clear on your questions. Some Excel training can earn you PDUs.
For material you sure can lookup here you will find a few template using Excel for projet management

Some product/add-on options

In past experiences, all relative project information was kept in a single excel workbook, using worksheets for various plans as needed/required by the organization (charter/overview/executive summary, stakeholder register, tasks, time tracking, risk register, comms, issue tracking, ...)

Realistically, this could be built as needed with a collection of existing templates satisfying the above by copying or mimicking in excel.

Ideally, if this is the chosen method for your organizations project management, best to manage centrally in, for example, SharePoint, or another medium to enforce versioning, and security.
