Not only CAN you use Kanban you SHOULD use Kanban. Even if you don't get fully into Just-In-Time delivery or WIP limits there are some things that you can use.
1) Information Radiator - A kanban board will immediately make your process visible to all. You'll immediately see bottlenecks and other things you haven't seen before. (ex. If this issue is truly critical, why has it been in this step in the process for 90 days?)
2) The physical act of moving things to done! Your team will be able to quickly pivot to an agile mindset of prioritizing work and getting more done instead of getting more started. Saving Changes...

As people have already mentioned you need to really understand every and any methodology you plan to use.
For learning Kanban I recommend that you read a good book. There are several good books on Kanban. My favourite is "Kanban in 30 days" http://shop.oreilly.com/product/9781783000906.do . (No I am not the author, and we are not family. We just happen to have very similar names.)
Kanban is really a process improvement scheme, that can be applied on top of any process you already have (be it Waterfall project, Scrum, XP or operations/business-as-usual.) Saving Changes...
