Very Broad question. Are you referring to Human Resources or a Disaster that causes your office building to be unavailable for a few months and hamper your project progress because you have lost access to requirements documentation, Project Management Information System, All your templates ?
If its human resources and they are internal , you should have contingency reserves to go and get some staff from outside agencies or recruit new ones.
Your workplace has insurance to cater for catastrophe. If you have a contract with an external agency , a catastrophe like a building fire will enable to use the Force Majeure clause where you can break the contract without penalties

Two steps can be taken in this account are as follows:-
1) For the project & employees you need to take insurance in order to take the Cost baseline into the account.
2) In order to check the schedule baseline in present situation, company can sublet or outsource the work to finish the work on time.

If you lose Employees:
To run a project without issues, always plan with a backup resource and make sure that backup resource is having full knowledge about that project.
This can be handled easily if the technical documentation is clearly maintained.
If you don't have a backup resource, or no one matches that project skill set. You can hire some freelancers from Upwork, Guru, freelancers website etc.
Is questing for Issue , if it is an issue , corrective actions requires to control variance & root cause analysis .
However , if the documents are been updated timely and monitoring day to day work effectually . there may be less impact .
However , A good project manager can act as a director & mentor and so on , if the project manager has strong project management skill , I am sure that it may not big challenge.
