I am putting together a detailed schedule by hour of all the various tasks
that need to be accomplished for a complicated IT infrastructure move project I am currently using an Excel spreadsheet and it is getting messy and
complicated. I would like to use MS Project, but I have never used
project to do an hour by hour schedule. I know I can specify duration in
hours, and can set up a Gantt chart to show the days in increments, but I
don't seem to be able to find a way to specify start times by hour. Does anyone know how to do this or have a sample MPP that does this? Saving Changes...

Tools, Options, select the View tab and change the date format to one that includes the time. You can then see and type in specific times when you display columns like Start, Finish, etc. Saving Changes...
