If you're starting from scratch, I would suggest you check out Axelos' PRINCE2. It offers a process and templates to get you going.

Are there any PM standards or policies in the organization you work for? That would be the first thing to check - if not, are there any de facto standards originating from past projects?
If you are truly in that unique position of being the first person in your organization to apply PM discipline to a project, then I would suggest starting off simple to avoid overwhelming your team and stakeholders.
I might suggest taking a basic PM course which provides an overview of the PMBOK knowledge areas - usually, most of those types of courses will give you some practical hands-on using some templates which is better than trying to learn on the fly using something off the Internet.

It is hard to answer your post because lot of things I can write. But if I have to give you a piece of advice I will say: 1-it is simple than you hear outside there. Each person on this planet performs project management activities from the time she/he wake up to the time she/he go to bed. 2-the best way to start when you do not have formal experience in the field is what @Stéphane stated above: PRINCE2. If you have other in-house PMs you are comfortable with, you can ask advice and maybe find a mentor, preferably a successful PM, that you can bounce What-ifs off of and I hope the organization supports project management principles and has top to bottom support from management, contributors and stakeholders.
