I don't check my emails whole of Sunday until 9:00am on Monday morning. Same with WhatsApp groupchats (muted), unless it comes from boss' boss directly.
I reach office before 7:30am for breakfast and some 45mins of study (working on PMI-ACP).
The first hour from 9:00am is really just catching up on emails and messages accumulated since last Friday, or at times Saturday.
If things blew up ..... then I call a team meeting at 10:30am to assign the firefighters (if they have not already been activated by now). The first hours of Monday is really to focus on what others have to do.
After lunch is when I sit down and do my own tasks that are not delegated ..... like answering to boss' boss why things blew up.
I had anxiety and panic attacks in the past when I started "work" from Sunday night, and checking messages incessantly upon waking up Monday morning and making phone calls while commuting or rushing to office. Not sustainable, health affected. Saving Changes...

Interesting question. The coffee banter was fun, but it would be worth rephrasing the question for another run at the discussion.
The middle of a project would have to be my favorite, whether things are going well or going wrong. It's like a game of chess: the first several moves are getting a feel for strategy and clearing off a few pieces; at the end you are focused on getting the king (last piece of the project) finished. But the middle is where the fun is - surprise moves, small victories, and warranted confidence that in the end you will be successful.
So, on a Monday morning (while enjoying 3-4 cups of coffee - black, medium roast, NO Starbucks!), I would do a quick status check of all projects (typically I had 2-6 going on at once), and assuming there are no fires to put out, do a casual wander through the office to look the team members in the eye - it helps to verify what the data is telling you and also builds the bond. If I could do that by 10, then I would have a pretty good idea of how the week would go.

A spritz of carbonated water, now that's innovation.
Yes, its out of a machine, like fountain soda, so with the induced air, creates a lighter, frothier double espresso. Saving Changes...
