It is my understanding that PMI has to approve PDUs that can be earned through approved education however, by giving back to the community you may be able to create your own PDU earning opportunities. 1 PDU is the equivalent of 1 hour of learning or activity. In the case of reading PMBOK 7th, PDUs can be requested for the activity however, it is unclear if there is a limit to the number of hours that can be claimed. Saving Changes...

As per the PMI CCRS, reading a book falls under Education / Read. Technically, you can claim all 60 PDUs under Education but I highly doubt PMI will accept 60 self-reported PDUs under Reading.
To add to the other's feedback, if you are going to claim more than a couple of hours for reading you should be prepared to support the submission with some evidence - for example, journal notes you took based on the readings.
