For short-term projects, it is unlikely that the the organization's structure will change much. On a multi-year project, you may find that the project lives through turbulent changes (i..e., reorganizations).

Usually the power dynamic related to the organization structure around a project changes for reasons outside of that project - a merger or acquisition or some other organization transformation for example.
As a project progresses from the early exploratory phase to detailed planning and then execution, the team may grow significantly. That may shift the project from a projectized organization to more of a functional one.

The structure of the organization rarely changes throughout a project unless there was a merger of acquisition like Kiron mentioned.
Changing the structure for an organization is not an easy thing to do and requires delicate planning well in advance of taking any actual steps because if not done properly, it can disrupt business continuity for on going operations and projects.

I could be wrong, but my take is the question is asking how the project itself is organized, not the organization structure of the performing business itself. In that sense, they can change from a dedicated team, to participants working part time on the project while also supporting other projects and day-to-day operations.
