I have seen a few away to have meeting minutes updated live using software. But so fare it was always with standard Office software (Word or Excel mainly).
What is your experience?

My experience is the same as yours and we sometimes use OneNote as well on a shared portal so everyone can see the updates.

I love OneNote and use it extensively in organizing my projects. We also store meeting notes on a shared drive and I have frequently been told that team members refer back to those notes often.
Vincent, Microsoft Word and Excel are probably the norm for corporate; but I have used others with non-profit organizations such as Pages and Google Docs.

We also use Skype for our virtual meetings, remote coaching sessions, virtual trainings. We were advised to download the Skype recorder. It's free! You can listen to the recording afterwards.

Taking down live minutes is challenging. Meetings must be recorded whatever medium we use. Skype works for us when we work remotely.. Retrieval of video and audio recordings is easy. Just back up your audio files.
