You'll need to try to figure out (likely with a couple of probing questions) what is the priority for your interviewer(s). That will then help you prioritize your accomplishments.

It's good to mention projects with a healthy mix of complexity, risks, issues, and how you overcame these. Given that most of project work is communication, the interviewer may want to hear about conflict resolution, collaboration, team development, leadership, stakeholder engagement etc.

It's an interesting dance, these interviews. Which interview? First, second, third? I ask b/c the questions and level of 'detail' is different.
You will need to map your accomplishments to the needs of the organization - all this based on what you have been able to garner through your questions, their overview, and the job description. Our experiences many times are restricted to the paradigm within our most recent organization, in which case, we need to project experiences in such as way that shows value to the org in which you are interviewing.

I will create an Excel spreadsheet of each job PM requirement, and list next to it, examples of PM accomplishments.
